Sweet Potato Soup

(serves 6-8)

½ Cup Celery
½ Cup Onions
4 Cups Sweet potato
½ Cup Ina-Paarman Stock
2-3lt Water
+/- 50ml Olive Oil (For frying)

  1. Fry the onion and celery in the olive oil
  2. Add the sweet potato and sweat for +/- 10min
  3. Add the diluted stock mixture and boil for +/- 60min
  4. Mash or blend (depending on the desired consistency)
