Ratatouille

2 tbsp Olive oil
1 Brinjal (thinly sliced)
1 Large onion (cut into eights)
2 Cloves garlic diced
2 green peppers (Chopped into large pieces)
5 large Baby Marrows, (thick slices)
1 Bay leaf
Salt and freshly ground pepper to taste
8 tomatoes (skinned and Chopped)
5 ml fresh thyme
½ tsp cayenne Pepper
fresh parsley – Chopped
fresh basil leaves – Chopped

Method:

Heat oil in large heavy-based Saucepan and brown the onion and garlic.
Add peppers
Add the Aubergine fry for 5 min
Add the courgettes fry for another minute
Add the tomatoes, thyme and bayleaf and season with salt, pepper and Cayenne pepper.
Cook for ± 20 min
Stir in the fresh Parsely and Basil and serve.
