Leek & Potato Soup

(±10 portions)

1 Medium Onion , chopped
1 Garlic clove, chopped
10ml Olive Oil
2 Celery sticks, sliced
3 Leeks, sliced
4 Medium Potatoes, chopped
1tbsp fresh herbs
Black pepper
2l Water
2tbsp Vegetable stock

Fry the onion and garlic in olive oil.
Once the onion is translucent add all the other ingredients except the water and stock, stir fry for about 30 seconds.
Add the water and stock, boil for ±45 minutes or until the potato is soft.
Liquidize or mash with a potato masher until you have the consistency required.
Add more water if needed.
