Avo & Apple Salad

(serves 5)

300g/2 Medium Avocados (cut into large cubes)
50g Celery (sliced)
100g/1 Granny Smith Apples (chopped into 1cm cubes)
25g Spring Onions (chopped finely)
75g/2 Ripe Tomatoes (cubed)
25g/1 large Yellow Sweet Pepper (Finely Diced)
200g/1packet Watercress (discard thick stalks, cut into big bites)
Vegeable Salt to taste

Mix the Celery, Apples, Spring onions, tomatoes, sweet pepper and watercress well.

Add the Avocado and mix gently until well combined.

Serve 120g portions

Avocado and coming back in season and should be readily available in March and thus a perfect time for one of our favorite Hoogland salads.
