250g (1 punnet) Baby corn (Cut into small circles)
250 g Cocktail tomatoes (halved)
¼ Cucumber (diced into small pieces)
½ medium Pineapple (Cut into small blocks)
3 stalks Spring onion (chopped finely)
1 handfull of Almonds
2 tbsp Fresh corriander leaves (Finely Chopped)
Vegetable salt to taste
Dry toast the Almonds chopp and set aside to cool.
Mix all the ingredients together and season to taste.
