½ Cup Celery
½ Cup Onions
4 Cups Sweet potato
½ Cup Ina-Paarman Stock
2-3lt Water
+/- 50ml Olive Oil (For frying)
- Fry the onion and celery in the olive oil
- Add the sweet potato and sweat for +/- 10min
- Add the diluted stock mixture and boil for +/- 60min
- Mash or blend (depending on the desired consistency)
