This refreshing salad is perfect for warmer days – simple to prepare, deeply nourishing, and full of gentle energy.
Ingredients
- 1 Tbsp olive oil
- 1 cup couscous
- 1 tin chickpeas – drained and rinsed
- 2 spring onions – finely chopped
- 1 carrot – peeled and cubed
- 3 ribs celery – diced
- 1 tomato – diced
- ½ cup raisins
- 2 Tbsp balsamic vinegar
- Salt and pepper to taste
Method
- In a saucepan, sauté the couscous in olive oil for 1 minute.
- Remove from heat and add 1 cup of boiling water, stirring with a fork to fluff the granules. Cover and set aside for 5 minutes to swell.
- In a small bowl, toss the raisins and chickpeas with the balsamic vinegar.
- In a large bowl, mix the carrot, celery, tomato, and spring onions. Add the chickpeas and raisins.
- Fluff the couscous again and add it to the mixture. Stir well to combine.
- Set aside to cool, then season to taste before serving.
Tip: This salad pairs beautifully with a simple yoghurt dressing or a handful of toasted seeds.
