250g Bulgar wheat
45ml Olive Oil
1 Medium Brinjal Sliced into thin rings
1 small bunch Mixed Fresh herbs (chopped)
3 Spring onion Chopped
¼ cup Sundried Tomato
1 cup Baby Spinach Chopped
¼ cup Feta Cheese
Preheat the oven to180°C
Brush brinjal lightly with oil and place on a baking sheet, bake for 30-45min
Soak the sundried tomatoes in boiled water for 5min/until soft cut into small pieces
Cook the bulgar wheat in boiling water until soft but stil firm
Mix all the ingredients together
Season to taste
Can be served hot or cold
Serve in 160g Portions for 125 kCal
