1 x potato
1 x onion
2 x Garlic cloves
½ tsp Mixed herbs
2 x leeks
2 x celery sticks
100ml Coconut milk
Curry powder to taste
1 tsp mustard seeds
vegetable stock
3 cups of corn
Fresh coriander for serving
Fry onions garlic and chili in a little olive oil with mixed herbs and curry, until onions are translucent.
Add all other ingredients (except coriander), cover with water and boil until botato is soft.
Liquidize and add fresh coriander.
