Lentil and Chickpea Curry

Ingredients

  • 1 cup red lentils – soaked for 30 minutes and rinsed thoroughly
  • 1 tin chickpeas – drained and rinsed
  • 2 Tbsp coconut oil
  • 1 onion – finely chopped
  • 3 fresh green chillies – deseeded and chopped
  • 1 knob ginger – cut into julienne strips
  • 1 clove garlic – minced
  • 1 Tbsp cumin – ground
  • 500 ml warm water
  • 1 handful fresh mint – chopped
  • 1 handful fresh coriander – chopped
  • 1 Tbsp butter or coconut oil
  • Salt to taste

Method

  1. In a saucepan, heat the onion, chillies, ginger, and garlic until the onion begins to brown.
  2. Add the cumin and cook for 1 minute.
  3. Add the lentils and chickpeas. Reduce the heat and cook for a few minutes.
  4. Add the water and bring to a boil. Simmer for 30 minutes.

Mix in the butter/coconut oil, mint, and coriander. Season to taste and serve.
