Kidney Bean Salad

 

(serves 5)

240g (1 tin) Red Kidney Beans (Drained)
100g Cocktail tomatoes (halved)
60g Mushrooms (sliced)
30g Radishes (sliced)
20g Spring onions (chopped finely)
80g Feta (finely crumbled)

Mix the Kidney beans, Cocktail tomatoes, mushrooms, radishes and Spring onion

Add the Feta and mix lightly to distribute feta evenly.

Serve 100g portions
