Bulgar Wheat Salad

 

250g Bulgar wheat
45ml Olive Oil
1 Medium Brinjal Sliced into thin rings
1 small bunch Mixed Fresh herbs (chopped)
3 Spring onion Chopped
¼ cup Sundried Tomato
1 cup Baby Spinach Chopped
¼ cup  Feta Cheese

Preheat the oven to180°C

  • Brush brinjal lightly with oil and place on a baking sheet, bake for 30-45min
  • Soak the sundried tomatoes in boiled water for 5min/until soft cut into small pieces
  • Cook the bulgar wheat in boiling water until soft but stil firm
  • Mix all the ingredients together
  • Season to taste

Can be served hot or cold 

Serve in 160g Portions for 125 kCal
