Leek & Potato Soup

1 Medium Onion , chopped
1 Garlic clove, chopped
10ml   Olive Oil
2 Celery sticks, sliced                    
3 Leeks, sliced                                            
4 Medium Potatoes, chopped      
1tbsp fresh herbs
Black pepper
2l Water
2tbsp Vegetable stock

  • Fry the onion and garlic in olive oil.
  • Once the onion is translucent add all the other ingredients except the water and stock, stir fry for about 30 seconds.
  • Add the water and stock, boil for ±45 minutes or until the potato is soft.
  • Liquidize or mash with a potato masher until you have the consistency required.
  • Add more water if needed.
