Corn Soup

 

1 x potato
1 x onion
2 x Garlic cloves
½ tsp Mixed herbs
2 x leeks
2 x celery sticks
100ml Coconut milk
Curry powder to taste
1 tsp mustard seeds
vegetable stock
3 cups of corn
Fresh coriander for serving

  • Fry onions garlic and chili in a little olive oil with mixed herbs and curry, until onions are translucent.
  • Add all other ingredients (except coriander), cover with water and boil until botato is soft.
  • Liquidize and add fresh coriander.
