Green Bean Salad with Grainy Mustard
Serves 6 as a starter
350 g Green Beans, trimmed and halved
1 shallot, finely chopped
1 ½ tbsp whole grain Mustard
3 tbsp Red Wine vinegar
1 tbsp Olive oil
45 g Smoked Mozzarella Cheese, Juilienned
Salt and black pepper to taste
- Blanch the green beans until tender. Refresh under cold running water until they are cool and set aside in a colander to drain.
- Mix the shallot, mustard, vinegar, oil, salt and pepper in a large bowl.
- Add the cheese and beans and toss well to combine all the ingredients.
- Chill in the refrigerator for 10 minutes before serving.
