Broccoli and Almond Salad

 

(Serves 6)

2 large heads Broccoli – cut into florets
½ cup Almonds
2 tbsp butter
¼ cup lemon juice
Vegetable salt to taste

  • Blanch the Almonds in water and remove the skins, chop roughly
  • Blanch the Broccoli in rapid boiling water for 3 minutes and immediately refresh under cold water
  • Melt the butter and add the lemon juice
  • Toss the lemon butter through the broccoli and almonds
  • Season to taste.
